- 1 pound lean ground beef
- 16 ounces enchilada sauce
- 2 cups shredded mozzarella cheese

Instructions
- Preheat and Cook: Preheat oven to 350°F (175°C). Cook tortellini according to package directions until al dente. Drain and set aside.
- Brown Beef: In a skillet, brown the ground beef over medium heat until cooked through. Drain any excess grease.
- Assemble and Bake: In a 9×13 inch oven-safe casserole dish, combine cooked tortellini, browned ground beef, enchilada sauce, and 1 cup of mozzarella cheese. Toss to coat. Sprinkle the remaining mozzarella cheese over the top. Bake for 20-30 minutes, or until the cheese is melted and bubbly.
