- 80g butter
- 180g white marshmallows
- 1 tsp vanilla essence
- 4 cups rice bubbles

Instructions
- Prepare the Tray: Line a 17 x 27cm baking tray with baking paper and set aside to ensure the slice won’t stick and for easy removal later.
- Melt the Butter: Place the butter in a large saucepan over low heat and allow it to melt completely without browning.
- Add Marshmallows: Add the white marshmallows to the melted butter, stirring continuously until the marshmallows melt completely and blend smoothly with the butter.
- Flavor the Mixture: Stir in the vanilla essence to add aromatic flavor and then remove the saucepan from the heat to prevent burning.
- Combine with Rice Bubbles: Quickly add the rice bubbles to the melted marshmallow mixture, mixing thoroughly to coat all the cereal evenly before the mixture sets.
- Press into Tray: Transfer the mixture into the prepared baking tray, spreading it evenly to the edges and pressing down firmly with the back of a dessert spoon for a compact slice.
- Decorate and Chill: Drizzle the melted white chocolate over the surface, then scatter Christmas sprinkles and M&Ms on top for a festive finish. Refrigerate for at least 2 hours or overnight to set firmly.
- Slice and Store: Once chilled, slice into 16 squares and store them in an airtight container to keep fresh.

- Work quickly when mixing the rice bubbles into the marshmallow mixture to prevent it from setting too soon.
- You can substitute rice bubbles with puffed rice cereal if desired.
- If white chocolate is too thick to drizzle, gently re-melt it over low heat or in short bursts in the microwave.
