Instructions

- Cook Toffee Mixture: In a small saucepan over medium-high heat, melt the unsalted butter. Once melted, add the granulated sugar and stir constantly as the mixture comes to a rolling boil. Immediately remove from heat once boiling begins to prevent burning.
- Assemble and Bake: Pour the hot toffee mixture evenly over the arranged saltine crackers on the baking sheet. Place the baking sheet in the preheated oven and bake for 13-15 minutes, or until the crackers turn browned and the toffee is caramelized.
- Transfer Toffee: Carefully remove the toffee from the oven. Using a small spatula, lift each piece of the toffee cracker mixture from the sheet and place onto a parchment paper-lined surface to cool slightly.
- Melt and Spread Chocolate: Melt the white chocolate wafers until smooth, either in a microwave in short bursts, stirring frequently, or over a double boiler. Spread the melted white chocolate liberally over each toffee piece while still warm.
- Add Nuts and Set: Immediately sprinkle the chopped pecans over the white chocolate before it sets to ensure they stick well. Allow the chocolate to fully set at room temperature.
- Store: Once fully cooled and chocolate is hardened, store the toffee in an airtight container at room temperature for up to 5 days to maintain freshness.
