For the Chicken Enchiladas:
- 2 cooked chicken breasts, shredded
- 1 cup green enchilada sauce
- 1 cup shredded mozzarella cheese
- 6 medium flour tortillas (or corn tortillas)
For the White Sauce:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups low-sodium or no-sodium chicken broth
- 4 ounces canned green chiles (1 small can)
- 3/4 cup sour cream
- 1 cup shredded mozzarella cheese
For Garnish:
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat and Prep: Preheat oven to 350°F (175°C). Grease a baking dish with cooking spray.
- Fill Tortillas: In a bowl, combine shredded chicken, 1 cup of mozzarella cheese, and green enchilada sauce. Fill each tortilla with about ¼ cup of the mixture and roll up tightly. Place seam-side down in the prepared baking dish.
- Make White Sauce: In a saucepan, melt butter and whisk in flour. Cook for 1 minute, then gradually whisk in chicken broth until smooth. Simmer until thickened and bubbly. Stir in sour cream and green chiles. Season with salt and pepper to taste.
- Bake: Pour the white sauce over the enchiladas and top with remaining mozzarella cheese. Bake for 22-25 minutes, or until golden brown and bubbly.
- Serve: Garnish with fresh parsley and serve hot.
