This Turkey Enchilada Skillet is a quick and flavorful one-pan meal that combines ground turkey, black beans, vegetables, and gooey cheese, all simmered in enchilada sauce.

Ground Turkey:
- 1 lb ground turkey
Corn Tortillas:
- 4 corn tortillas, cut into 1 inch slices
Black Beans:
- 1 15 oz can black beans, rinsed
Red Enchilada Sauce:
- 1 15 oz can red enchilada sauce
Diced Green Chilis:
- 1 4 oz can diced green chilis
Red Bell Pepper:
- 1 red bell pepper, chopped
Frozen Corn:
- 3/4 cup frozen corn (NOT sweet corn)
White Onion:
- 1/2 cup chopped white onion
Mexican Blend Cheese:
- 1/2 cup shredded Mexican blend cheese
Avocado Oil:
- 1 tbs avocado oil
Cumin:
- 1 tsp cumin
Salt and Pepper:
- To taste
Optional Garnishes:
- cilantro, olives, queso fresco, avocado, sour cream
Instructions
- Cook Ground Turkey: Heat avocado oil in a skillet, add ground turkey, cumin, salt, and pepper. Cook until browned, breaking into crumbles. Set aside.
- Sauté Vegetables: In the same skillet, sauté bell pepper and onion until tender. Add beans, chiles, enchilada sauce, corn, and cooked turkey. Bring to a boil, then simmer.
- Simmer with Tortillas and Cheese: Mix in tortilla slices, add cheese, and heat until melted.
- Serve: Divide into bowls and top with garnishes.
