  • 2 (9-ounce) packages breakfast sausage links
  • 1 pound bacon
  • 1 (32-ounce) package tater tots
  • 12 large eggs
  • 1/2 cup milk
  • 1/4 cup green onions, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Monterey jack cheese, shredded
  • 2 cups cheddar cheese, shredded~divided
  • 2 tablespoons green onions, thinly sliced

Instructions

  1. Preheat oven: Preheat oven to 350ºF (177ºC).
  2. Cook sausage: Cook the sausage links in a skillet until cooked through. Slice into 1/2-inch pieces.
  3. Cook bacon: Cook bacon in the same skillet until brown and crispy. Crumble.
  4. Arrange tater tots: Arrange tater tots in a single layer in a 9×13 baking dish.
  5. Prepare egg mixture: Whisk together eggs, milk, green onions, salt, and pepper. Stir in cooked sausage and half the bacon. Fold in Monterey jack cheese and half of the cheddar cheese.
  6. Bake: Pour the egg mixture over tater tots. Bake until set, about 40-45 minutes.
  7. Add cheese: Sprinkle remaining cheddar cheese on top and bake for an additional 5-7 minutes until melted.
  8. Rest and serve: Allow to stand for 10 minutes before cutting. Sprinkle with remaining bacon and green onions before serving.
