Description

For the dumplings:

  • 3/4 cup all-purpose flour
  • 2 large eggs, room temperature, lightly beaten
  • 1 tablespoon fresh parsley, chopped
  • 2 cups leftover stuffing

For the soup:

  • 3 tablespoons unsalted butter
  • 2 large carrots, peeled and diced
  • 2 stalks celery, cut into chunks
  • 1 large onion, diced
  • 6 cups chicken stock (or turkey stock)
  • 2 cups shredded cooked turkey
  • Kosher salt and freshly cracked black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Make Dumplings: In a bowl, combine flour, eggs, and parsley. Add leftover stuffing and mix until well combined.
  2. Cook Dumplings: Bring a large pot of salted water to a boil. Dip a spoon in hot water and drop large dollops of the stuffing mixture into the boiling water. Cook until the dumplings float to the top. Remove with a slotted spoon and set aside.
  3. Make Soup: In a large pot or Dutch oven, melt butter over medium heat. Add carrots, celery, and onion. Season with salt and cook until vegetables are slightly softened.
  4. Simmer Soup: Pour in chicken (or turkey) stock and bring to a boil. Reduce heat and simmer for 30-40 minutes, or until vegetables are tender.
  5. Add Turkey and Dumplings: Add shredded turkey and cooked dumplings to the soup. Simmer until heated through.
  6. Season and Serve: Season with salt and pepper to taste. Garnish with fresh parsley and serve hot.
