  • 1 cup (200g) granulated sugar, divided

  • 1 1/4 cups (300ml) milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). This ensures your oven is at the right temperature when you’re ready to bake the cobbler.
  2. Macerate strawberries: In a large bowl, combine the hulled and halved strawberries with ⅓ cup of sugar. Stir well and set aside. This process, called maceration, allows the strawberries to release their juices and become sweeter.
  3. Melt butter: Place 9 tablespoons of unsalted butter in a 13×9-inch baking dish. Put the dish in the preheated oven for about 10 minutes, or until the butter is completely melted.
  4. Prepare batter: While the butter is melting, whisk together the flour, baking powder, salt, and remaining ⅔ cup of sugar in a medium mixing bowl. Add the milk and vanilla extract, stirring just until combined. Be careful not to overmix the batter.
  5. Assemble cobbler: Carefully remove the baking dish with melted butter from the oven. Pour the prepared batter over the melted butter. Do not stir. Then, spoon the macerated strawberries over the batter, leaving any excess liquid in the bowl.
  6. Bake: Place the cobbler in the oven and bake for 55 to 60 minutes. The cobbler is done when the batter is golden brown and the strawberry juices are bubbling around the edges.
  7. Cool and serve: Allow the cobbler to cool for 15 minutes before serving. This cooling time helps the juices to set. Serve warm, optionally with a scoop of vanilla ice cream for extra indulgence.
