Description

These Spicy Peanut Noodles with Cucumber are a delicious and flavorful dish that is perfect for a quick and satisfying meal. The creamy peanut sauce with a kick of spice pairs perfectly with the refreshing cucumber and fresh herbs.


Ingredients

Peanut Sauce:

  • 2 tablespoons natural creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lime juice
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 teaspoons Sambal Oelek (chile garlic paste)
  • 1 teaspoon rice vinegar
  • 1/2-inch piece fresh ginger, grated
  • 1 small garlic clove, grated
  • 1 pinch red pepper flakes (optional)

Other Ingredients:

  • 89 ounces dried ramen noodles
  • 1/2 English cucumber
  • 3 scallions
  • 1/4 cup fresh cilantro leaves
  • dry-roasted unsalted peanuts

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Prepare the Peanut Sauce Mixture: In a large mixing bowl, combine the peanut butter, soy sauce, lime juice, sesame oil, sesame seeds, sambal oeleek, rice vinegar, ginger, garlic, and red pepper flakes. Whisk until smooth.

  3. Prepare the Noodles:
  4. Add ramen noodles to boiling water, cook until al dente, drain, cool under water, drain again. Toss noodles with peanut sauce, cucumber, cilantro, and scallions. Season to taste.

  5. Serve room temperature topped with crushed peanuts, cilantro, and lime wedges.
  6. Store leftovers in the refrigerator for up to 3 days.

Notes

  • If the sauce thickens, add water to loosen it.
  • Adjust spice level to taste with more or less Sambal Oelek.
