Description

This Slow Cooker No Peek Chicken Recipe is an easy, comforting dish combining tender chicken breasts with creamy soups and flavorful rice. Made in the slow cooker without needing to peek, it ensures perfectly cooked, moist chicken and fluffy rice for a hassle-free, satisfying meal.

  • 1 ½ lbs. boneless skinless chicken breasts

Rice Mixture

  • 10.5 oz. cream of chicken soup (1 can)
  • 10.5 oz. cream of mushroom soup (1 can)
  • 1 can water (measured from one of the soup cans)
  • ½ tsp. garlic powder
  • ¼ tsp. pepper
  • 2 cups Minute® rice (not standard rice)

Seasoning

  • 1 oz. packet Lipton® onion soup mix

Instructions

  1. Prepare the rice mixture: In a large bowl, combine both cans of cream soup, one can of water, garlic powder, pepper, and the Minute rice. Mix all the ingredients thoroughly to ensure even distribution.
  2. Prepare slow cooker: Spray the inside of your slow cooker with non-stick cooking spray to prevent sticking.
  3. Layer the ingredients: Pour half of the rice mixture into the bottom of the slow cooker. Arrange the chicken breasts on top of this layer, then cover them with the remaining rice mixture.
  4. Add the seasoning: Sprinkle the packet of Lipton onion soup mix evenly over the top layer of rice mixture.
  5. Cook the dish: Cover the slow cooker and cook on HIGH for 3.5 hours. Avoid opening the lid or peeking during cooking to ensure proper texture and moisture.
