- 1 medium green bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 large onion, sliced
- 10 oz diced tomatoes (1 small can)
- 4 oz green chiles (1 small can)
- 1 lime, juiced

- 3 large chicken breasts, boneless and skinless
Seasoning & Others
- 2 tablespoons fajita seasoning
- 8 tortillas, for serving
Instructions
- Prepare the slow cooker base: Add half of the sliced bell peppers and onions into the bottom of your slow cooker, creating a flavorful vegetable layer.
- Add chicken and seasoning: Place the chicken breasts on top of the vegetables. Sprinkle 1 tablespoon of fajita seasoning evenly over the chicken to start building layers of flavor.
- Layer remaining ingredients: Add the diced tomatoes, green chiles, and the remaining bell peppers and onions on top of the chicken. Season with the remaining tablespoon of fajita seasoning and pour in the juice from the lime to brighten the dish.
- Cook the fajitas: Cover the slow cooker and cook on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours until the chicken is tender and fully cooked.
- Shred the chicken: Remove the chicken breasts from the slow cooker and slice into strips or shred using two forks. Return the shredded chicken to the slow cooker and mix thoroughly with the cooked vegetables and juices.
- Serve: Warm the tortillas and spoon the fajita mixture into them. Add your favorite toppings such as sour cream, guacamole, or cheese, and enjoy your flavorful homemade fajitas.
Notes
- Fajita seasoning can be store-bought or homemade to taste. Adjust spice level as preferred.
- Using the slow cooker on low heat yields more tender, juicy chicken but requires longer cooking time.
- Feel free to add extra toppings like salsa, shredded lettuce, or chopped cilantro for more flavor.
- Chicken can be cooked a day ahead and refrigerated; reheat gently before serving.
- If tortillas are not preferred, serve fajita mixture over rice or salad for a low-carb option.
