Description

Slow Cooker Beef and Cheddar Sandwiches are a hearty, flavorful meal perfect for a comforting lunch or dinner. Tender beef chuck roast is slow-cooked with aromatic spices, barbecue sauce, and onions until it easily shreds, then piled onto toasted buns and topped with cheddar cheese and Arby’s-style and horseradish sauces for a deliciously satisfying sandwich experience.

For the Beef:

  • 3 lbs. beef chuck roast
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 ½ tsp. salt

  • 1 white onion, sliced
  • 1 cup Arby’s barbecue sauce (or any barbecue sauce)

  • Hamburger buns

  • Horsey sauce (available at most grocery stores, or use horseradish mayo)
  • Cheddar cheese slices (or nacho cheese sauce, or Cheez Whiz)

Instructions

  1. Prepare the Slow Cooker: Add the chuck roast to the slow cooker. Evenly sprinkle onion powder, garlic powder, salt, pepper, and brown sugar over the meat. Pour Worcestershire sauce on top to add moisture and flavor.
  2. Add Onions and Barbecue Sauce: Slice the white onion into rings and layer them on top of the roast. Pour the barbecue sauce over the onions and beef to infuse the meat with sweet and tangy taste during cooking.
  3. Cook the Beef: Cover the slow cooker and cook on low for 9 hours. This slow and low cooking process tenderizes the beef, making it juicy and easy to shred.
  4. Shred the Meat: When done, remove the beef onto a plate and shred it with two forks, discarding any excess fat. Leave about ½ cup of juices and onions in the slow cooker, then return the shredded beef to soak up the flavorful juices. If the sauce looks greasy, degrease it using a paper towel for a cleaner taste.
  5. Toast the Buns: Toast hamburger buns if desired to add a slight crunch and prevent sogginess when assembling the sandwiches.
