Description

This Slow Cooker Balsamic Chicken recipe offers tender and flavorful chicken breasts simmered in a tangy balsamic vinegar sauce with Italian seasoning, garlic, onions, and tomatoes. Perfect for an easy, hands-off meal served over pasta or rice, it’s a comforting dish that is ideal for busy weeknights or meal prepping.

Ingredients

Scale

Chicken

  • 2 ½ lbs. chicken breast
  • 1 Tbsp. Italian seasoning
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 Tbsp. minced garlic
  • 1 small white onion, sliced

Sauce

  • 14.5 oz. can diced tomatoes (undrained)
  • ½ cup balsamic vinegar
  • ½ cup chicken stock or broth

Instructions

  1. Prepare the chicken and seasoning: Place the chicken breasts into the slow cooker. Season evenly with Italian seasoning, salt, and pepper to infuse the meat with flavor as it cooks.
  2. Add aromatics and liquids: Add the minced garlic, sliced onion, the canned diced tomatoes with their juice, balsamic vinegar, and chicken stock into the slow cooker on top of the chicken.
  3. Cook the chicken: Cover the slow cooker with its lid and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Cook until the chicken is tender and fully cooked through. The chicken can be served whole or shredded depending on your preference.
  4. Serve and garnish: Serve the balsamic chicken over cooked pasta or rice. Optionally, garnish with fresh parsley or basil for a fresh herbal touch. Enjoy your hearty and comforting meal.

Notes

  • Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to three months. Thaw frozen portions overnight in the refrigerator before reheating.
  • Use a thicker balsamic glaze instead of thinner balsamic vinegar for a richer sauce consistency.
  • Topping with cheese, such as mozzarella or parmesan, enhances the flavor and gives it a delightful twist reminiscent of margarita chicken.
