Description

This Slow Cooked Summer Beef Casserole is a hearty and flavorful dish perfect for a comforting meal. Tender braising beef is cooked slowly with ale, stock, and vegetables until rich and succulent.


Ingredients

For the Beef:

  • 2 tbsp olive oil
  • 600 g (1.3 lbs) braising beef, chopped into chunks
  • 2 tbsp plain (all-purpose) flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cloves garlic, peeled and minced
  • 330 ml (11 oz) Guinness or other ale
  • 360 ml (1 1/2 cups) beef stock

For the Casserole:

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small courgette/zucchini, chopped into chunks
  • 3 tbsp grated parmesan cheese

Instructions

  1. Preheat the oven: Preheat the oven to 160C/325F (fan).
  2. Brown the beef: Heat oil in a Dutch oven, coat beef in flour, salt, and pepper. Brown the meat.
  3. Add flavors: Add garlic, Guinness, and stock. Bring to a boil, cover, and cook in the oven for 3 hours.
  4. Add vegetables: After 3 hours, add chopped peppers and courgette. Cook for 5 more minutes.
  5. Finish and serve: Sprinkle with parmesan, parsley, red onion, and serve with couscous.
