Description

These Red Velvet Cheesecake Bites are the perfect combination of rich red velvet flavor and creamy cheesecake, all in a delightful bite-sized treat. Easy to make and even easier to enjoy!

Red Velvet Base

  • 1 cup all-purpose flour
  • 1/4 cup + 1 tablespoon unsweetened cocoa powder
  • 3/4 cup salted sweet cream butter, melted and cooled
  • 1 1/4 cups granulated sugar
  • 1 tablespoon red gel food color
  • 2 teaspoons pure vanilla extract
  • 2 large eggs, room temperature and beaten

Cheesecake Filling

  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg yolk

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Spray a mini muffin pan with nonstick cooking spray and set aside.
  2. Prepare Red Velvet Base: In a small bowl, combine flour and cocoa powder. In a medium mixing bowl, whisk melted butter, sugar, red food color, vanilla, and beaten eggs. Stir in the flour mixture until just combined.
  3. Make Cheesecake Filling: In another medium bowl, beat cream cheese with sugar and vanilla. Add egg yolk and mix until smooth.
  4. Assembly: Pipe 1 tablespoon of red velvet base into muffin pans. Pipe 2 teaspoons of cheesecake filling into the center.
  5. Bake: Bake for 8-9 minutes. Let cool for 20-30 minutes before transferring to a wire rack to cool completely.
