Description

Cookie Dough:

  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree

  • 2 1/4 cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • 1/2 Teaspoon salt
  • 1 cup chocolate chips
  • 1 Cup mini marshmallows
  • 8 graham crackers, broken into small pieces
  • 1 Teaspoon orange food coloring (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add wet ingredients: Beat in the pumpkin puree, egg, and vanilla extract until well combined. Add orange food coloring if desired.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Mix the dough: Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  6. Add mix-ins: Gently fold in chocolate chips, mini marshmallows, and graham cracker pieces.
  7. Form and top cookies: Drop rounded tablespoons of dough onto the baking sheet. Press in extra marshmallows, chocolate chips, and graham crackers on top of each cookie.
  8. Bake: Bake for 12-14 minutes until golden around the edges but soft in the center.
  9. Cool and serve: Allow the cookies to cool on the baking sheet before transferring to a wire rack. Serve at room temperature.
