Scale
- 15 slices of bread (challah, brioche, or any thick-cut bread)
- 1/2 cup pumpkin puree
- 4 large eggs
- 2/3 cup milk
- 3 tablespoons brown sugar
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
Instructions
- Make Batter: In a medium bowl or shallow dish, whisk together the pumpkin puree, eggs, milk, brown sugar, flour, vanilla extract, pumpkin pie spice, cinnamon, nutmeg, and salt until smooth.
- Heat Griddle: Heat a griddle or large skillet over medium heat to 350°F (175°C). Lightly grease with oil or nonstick cooking spray.
- Soak Bread: Dip each slice of bread into the pumpkin batter, ensuring both sides are coated. Gently shake off any excess batter.
- Cook French Toast: Place the soaked bread slices on the hot griddle. Cook for 2-4 minutes per side, or until golden brown and cooked through.
- Serve: Serve immediately with your favorite toppings, such as maple syrup, whipped cream, or a sprinkle of powdered sugar.
Notes
- For best results, use day-old bread, which will absorb the batter better.
- You can adjust the amount of pumpkin pie spice to your liking.
- If you don’t have pumpkin pie spice, you can make your own by combining cinnamon, nutmeg, ginger, and cloves.
- To keep the cooked French toast warm, place it in a preheated oven at 200°F (95°C) while you finish cooking the remaining slices.
