Description

This Pressure Cooker Lime Verde Chicken recipe is a quick and flavorful dish that uses tender chicken breasts cooked in vibrant salsa verde with fresh lime juice and aromatic spices. Perfect for tacos, burritos, salads, or sandwiches, it’s an easy weeknight meal packed with zesty Mexican-inspired flavors.

Ingredients

Scale

Main Ingredients

  • 4 chicken breasts
  • 1 16 oz. bottle salsa verde
  • 34 limes (juiced)
  • 1 tsp garlic paste or 2 garlic cloves minced
  • 1 tsp cumin
  • 1/2 tsp salt

Garnish

  • Fresh cilantro
  • Lime wedges
  • Diced tomatoes

Instructions

  1. Combine Ingredients: Add the chicken breasts, salsa verde, garlic paste or minced garlic, cumin, salt, and the freshly squeezed juice from 3 to 4 limes into the pressure cooker pot. Ensure all ingredients are mixed well.
  2. Pressure Cook: Seal the pressure cooker and cook on high pressure for 10 minutes. After cooking, allow the pressure to naturally release for 5 minutes before opening the lid.
  3. Shred Chicken: Remove the chicken breasts and shred them using two forks or an electric mixer. Return the shredded chicken to the pressure cooker pot and toss it well to coat with the verde sauce thoroughly.
  4. Adjust Seasoning: Taste the shredded chicken mixture and add additional lime juice and salt as preferred to enhance the flavor balance.
  5. Serve: Use the lime verde chicken as a filling for tacos, burritos, enchiladas, salads, soups, or sandwiches. Garnish with fresh cilantro, lime wedges, and diced tomatoes as desired.
  6. Store Leftovers: Refrigerate any leftovers in an airtight container for up to two days or freeze for up to two months for future meals.

Notes

  • This recipe can also be prepared in a slow cooker by cooking on high for 4 hours or on low for 6 hours, following the same ingredient preparation.
  • Using fresh lime juice brightens the dish and enhances the salsa verde’s flavor.
  • Shredding the chicken thoroughly allows the sauce to coat every bite for maximum flavor.
  • Adjust salt and lime juice to your taste preferences after cooking.
