Description

These Pizza Cupcakes are a fun twist on traditional pizza, with all the classic flavors baked into individual servings. Perfect for parties or a unique lunch option!

Dough:

  • cooking spray
  • 1 (11 ounce) can refrigerated pizza crust

Toppings:

  • 8 medium cherry tomatoes
  • 8 teaspoons shredded mozzarella cheese
  • 8 tablespoons pizza sauce (such as Classico)
  • 8 teaspoons finely chopped red onion
  • 8 tablespoons shredded mozzarella cheese
  • 8 slices pepperoni, quartered
  • 1/4 teaspoon Italian seasoning, or to taste
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1/4 teaspoon garlic salt, or to taste

Instructions

  1. Gather ingredients. Preheat the oven to 400°F (200°C) and grease 8 cups of a muffin tin with cooking spray.
  2. Finely chop cherry tomatoes and drain any liquid. Set aside.
  3. Unroll pizza crust on a floured surface and cut out 8 circles.
  4. Press dough circles into muffin cups.
  5. Add mozzarella, pizza sauce, tomatoes, red onions, and more mozzarella.
  6. Top with pepperoni and seasonings.
  7. Bake for 14-15 minutes until cheese is melted and bubbling.
  8. Let cool in tins for 5 minutes, then remove and serve hot.
