Toasted Pecans:
- 2 tablespoons butter
- 2 and 1/2 cups pecans, chopped
Crust:
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup brown sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
Filling:
- 1 and 1/2 cups brown sugar
- 3/4 cup light corn syrup
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Lightly spray a mini muffin pan with cooking spray and set it aside to ensure easy removal of the pie bites after baking.
- Toast the pecans: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped pecans and toast them for about 10 minutes, stirring frequently until they turn golden brown and release their nutty aroma.
- Make the crust: In the bowl of an electric mixer, beat the softened butter and brown sugar together until creamy and smooth. Gradually add the all-purpose flour and salt, mixing until the dough is well combined. Take a heaping tablespoon of this dough and press it firmly into the bottom and up the sides of each mini muffin cup to form individual crusts.
- Prepare the filling: In a large bowl, stir together the brown sugar, light corn syrup, melted butter, and vanilla extract until evenly combined. Add the toasted pecans to this mixture, making sure they are well coated with the filling.
- Fill the crusts: Spoon about one tablespoon of the pecan filling into each crust, filling it about three-quarters full to prevent overflow during baking.
- Bake the bites: Place the mini muffin pan in the preheated oven and bake for approximately 15 minutes, or until the crusts begin to brown slightly.
- Add extra filling and cool: Remove the pan from the oven and let it rest for about 5 minutes. Then, carefully scoop an additional tablespoon of filling onto each pie bite. Allow the bites to cool completely in the pan before removing them to maintain their shape.
Notes
- Use a mini muffin pan to achieve perfect bite-sized portions.
- Don’t overfill the crusts initially to avoid filling bubbling over during baking.
- Make sure to toast the pecans well to enhance their flavor.
- Allow the bites to cool fully to ensure they set properly and hold together when removed from the pan.
- These bites can be stored in an airtight container at room temperature for up to 3 days.
