Description

This Pecan Cobbler is a delightful Southern-style dessert featuring a buttery, fluffy batter topped with crunchy pecans and a sweet brown sugar sauce. Baked to golden perfection with a hint of cinnamon, it’s perfect served warm with a scoop of vanilla ice cream for a comforting treat any time of year.

Ingredients

Units Scale

Batter

  • 1/2 cup butter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract

Topping

  • 2 cups chopped pecans
  • 1 cup light brown sugar, packed
  • 1 1/2 cups boiling water
  • Ground cinnamon, for sprinkling

Optional Serving

  • Vanilla ice cream

Instructions

  1. Preheat and melt butter: Preheat the oven to 350°F. Slice the butter into pieces and add to a 9×13 inch baking dish. Place the dish in the oven as it preheats to allow the butter to melt evenly. Once melted, carefully remove the pan from the oven.
  2. Prepare the batter: In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Stir in the milk and vanilla extract just until blended; the batter will be slightly lumpy, which is normal.
  3. Assemble the cobbler: Pour the batter evenly over the melted butter in the baking dish. Gently spread it into an even layer, but do not stir or mix with the butter. Sprinkle the chopped pecans over the batter, then evenly distribute the packed light brown sugar on top.
  4. Add boiling water and cinnamon: Slowly drizzle the boiling water over the entire surface evenly, taking care not to stir or disturb the layers. Finally, sprinkle ground cinnamon evenly over the top.
  5. Bake: Bake the cobbler for 40 to 45 minutes, or until the batter is mostly set in the center and edges are golden and bubbly.
  6. Cool and serve: Let the cobbler cool for 10 minutes before serving. Serve warm with a scoop of vanilla ice cream if desired for an extra indulgent dessert experience.

Notes

  • Do not stir after pouring boiling water; this creates the cobbler’s distinct layered texture.
  • Use a 9×13 inch baking dish to ensure proper baking and texture.
  • For a nut-free version, omit pecans or substitute with chopped walnuts or pecan-free granola.
  • Ensure boiling water is poured slowly and evenly for best results.
  • Best served warm but can be reheated gently before serving.
