Description

This Parmesan Crusted Chicken recipe is a simple yet elegant way to prepare juicy and flavorful chicken breasts. Coated in a crispy Parmesan crust and pan-fried to golden perfection, it’s a delicious dish that’s ready in under 30 minutes.

Ingredients

Units Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 large egg
  • 1 tablespoon water
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded Parmesan cheese
  • 4 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. Prepare Chicken: Cut each chicken breast in half horizontally. If the breasts are very thick, butterfly them by slicing them almost in half horizontally, then opening them like a book. Place the chicken cutlets between two sheets of plastic wrap and pound them to an even thickness of about ½ inch.
  2. Make Egg Wash: In a shallow bowl, whisk together the egg, water, garlic, salt, and pepper until well blended.
  3. Coat in Parmesan: Place the shredded Parmesan cheese in another shallow bowl. Dip each chicken cutlet in the egg mixture to coat, allowing any excess to drip off. Then, dredge the chicken in the Parmesan cheese, pressing gently to adhere. Turn the cutlet over and repeat on the other side. Shake off any excess cheese.
  4. Cook Chicken: Heat butter and olive oil in a large skillet over medium-high heat. Add the coated chicken cutlets to the skillet and cook without moving until the edges are golden brown and crispy (about 3 minutes). Carefully flip the chicken and cook until golden brown on the other side.
  5. Serve: Transfer the cooked chicken to a serving plate and garnish with fresh parsley, if desired. Serve immediately.

Notes

  • Cheese: Use shredded Parmesan cheese, not grated, for the best texture.
  • Butter: Butter adds flavor and helps create a beautiful golden crust.
  • Pounding: Pounding the chicken ensures even cooking and helps the cheese adhere better.
  • Don’t Peek: Avoid flipping the chicken too early, or the cheese crust may not stick properly.
  • Serving Suggestions: Serve with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
