Ingredients
Units
Scale
- 1/2 pound (227 g) brussels sprouts
- 1/4 cup unsalted butter, melted
- 1/3 cup (46 g) grated parmesan cheese
- 1 teaspoon (3 g) garlic powder
- 1 tablespoon (15 ml) olive oil
- 1/4 teaspoon (1 g) kosher salt
- 1/8 teaspoon black pepper
Instructions
- Preheat the Oven
Place the oven rack in the middle position and heat the oven to 425°F (220°C). This high temperature will ensure your brussels sprouts get perfectly caramelized on the outside while remaining tender inside. - Prepare the Brussels Sprouts
Trim the woody stems of the brussels sprouts and cut each piece in half lengthwise. This exposes the inner leaves and creates a flat surface that will caramelize beautifully when in contact with the cheese mixture. - Make the Cheese Paste
In an 8-inch baking dish, whisk together ⅓ cup parmesan cheese, melted butter, and garlic powder until well combined. Spread this mixture in an even layer across the bottom of the pan. This will create a crispy, savory crust that adheres to the brussels sprouts. - Add Brussels Sprouts
Arrange the sprouts cut-side down in the pan, pressing them gently into the cheese paste. Make sure they’re evenly spaced. Brush the rounded tops with olive oil, then sprinkle with salt and pepper. Add a light dusting of additional parmesan cheese on top for extra flavor. - Roast
Bake until the cheese and surface of the sprouts develop a deep golden brown color, approximately 20 to 25 minutes. The cheese will crisp up and the brussels sprouts will become tender with caramelized edges. - Serve
Remove from oven and cool on a wire rack for 5 minutes. This allows the cheese on the edges to cool down and crisp up further. Use a paring knife or spoon to separate the sprouts from each other and the pan. Serve while still hot for the best taste and texture.
Notes
- For best results, choose brussels sprouts that are similar in size for even cooking.
- The parmesan cheese can be substituted with pecorino romano for a sharper flavor.
- Add a splash of lemon juice just before serving for brightness.
- These pair well with roasted meats, especially chicken or pork.
- Storing: Refrigerate in an airtight container for up to 3 days.
- Reheating: Microwave on high setting in 15 to 30-second increments until hot, or reheat in a 350°F oven for 5-10 minutes to maintain crispness.
- Doubling the Batch: Use a 13 by 9-inch baking dish and double all ingredients.
