- 1 teaspoon salt, or to taste
- 1 teaspoon black pepper, or to taste
For the Sauce:
- 2 tablespoons olive oil
- 1 tablespoon whole grain Dijon mustard
- 1 tablespoon Dijon mustard
- 2 tablespoons honey
- 6 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
Instructions
- Preheat and Season: Preheat oven to 425°F (220°C). Season chicken thighs generously with salt and pepper.
- Make Sauce: In a small bowl, whisk together olive oil, both types of mustard, honey, garlic, and red pepper flakes.
- Coat Chicken: Pour the sauce over the chicken thighs and toss to coat evenly.
- Bake: Transfer chicken thighs and any remaining sauce to a 9×13 inch baking dish. Bake for 35 minutes, or until the internal temperature reaches 165°F and the skin is crispy.
- Rest and Serve: Remove chicken from the oven and let it rest for 10 minutes, covered with aluminum foil, before serving.
Notes
- Chicken: Boneless, skinless chicken thighs can also be used, but reduce the cooking time to 20-25 minutes.
- Glaze: The honey mustard glaze is optional. For a simpler recipe, season the chicken with salt and pepper and drizzle with olive oil before baking.
- Storage: Store leftovers in the refrigerator for up to 3 days or freeze for 4-6 months.
