Description

This One-Pot Sausage Pasta is a hearty and flavorful dish that’s perfect for a quick weeknight meal. It features Italian sausage, tender pasta, and a rich tomato-based sauce, all cooked together in one pot for easy cleanup.


Ingredients

  • 1 pound Italian sausage (mild or spicy), casings removed and cut into 1/2-inch pieces
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 8 ounces tomato sauce
  • 12 ounces pasta (penne, fusilli, or similar), uncooked
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese, for serving (optional)

Instructions

  1. Brown Sausage: In a large pot or Dutch oven, brown the sausage over medium-high heat.
  2. Sauté Vegetables: Add onion and garlic to the pot and cook until softened.
  3. Add Remaining Ingredients: Stir in diced tomatoes, tomato sauce, pasta, vegetable broth, basil, oregano, salt, and pepper.
  4. Simmer: Bring the mixture to a boil, then reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until pasta is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
  5. Serve: Serve hot, garnished with Parmesan cheese, if desired.
