- 1 (14.5 ounce) can diced tomatoes, undrained
- 8 ounces tomato sauce
- 12 ounces pasta (penne, fusilli, or similar), uncooked
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese, for serving (optional)
Instructions
- Brown Sausage: In a large pot or Dutch oven, brown the sausage over medium-high heat.
- Sauté Vegetables: Add onion and garlic to the pot and cook until softened.
- Add Remaining Ingredients: Stir in diced tomatoes, tomato sauce, pasta, vegetable broth, basil, oregano, salt, and pepper.
- Simmer: Bring the mixture to a boil, then reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until pasta is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
- Serve: Serve hot, garnished with Parmesan cheese, if desired.
