For the Chicken:
- 4 tablespoons olive oil
- 1 pound chicken, cut into bite-sized pieces
- 1/2 teaspoon kosher salt
- Freshly ground black pepper, to taste
For the Alfredo:
- 14 oz smoked sausage, sliced on the diagonal
- 4 cloves garlic, minced
- 1 quart low-sodium chicken broth
- 2 1/2 cups heavy cream
- 1 pound penne pasta, uncooked
- 1 1/2 tablespoons Cajun seasoning, plus more to taste
- 4 oz freshly shredded Parmesan cheese, plus more as needed
- Italian parsley for garnish
Instructions
- Prepare the Chicken: Season chicken with salt and pepper. Brown in olive oil over medium-high heat.
- Add Sausage: Add sliced sausage and cook until lightly browned.
- Cook Aromatics: Stir in minced garlic and cook for about two minutes.
- Add Ingredients: Pour in chicken broth, heavy cream, dried pasta, and Cajun seasoning.
- Simmer: Bring to a simmer over medium-high heat. Reduce to low, cover, and cook for 15-20 minutes until pasta is tender.
- Finish: Remove from heat and stir in Parmesan cheese. Add chopped parsley and more Cajun seasoning to taste.

- You can adjust the spice level by adding more or less Cajun seasoning.
