  • 4 tablespoons olive oil
  • 1 pound chicken, cut into bite-sized pieces

For the Alfredo:

  • 14 oz smoked sausage, sliced on the diagonal
  • 4 cloves garlic, minced
  • 1 quart low-sodium chicken broth
  • 2 1/2 cups heavy cream
  • 1 pound penne pasta, uncooked
  • 1 1/2 tablespoons Cajun seasoning, plus more to taste
  • 4 oz freshly shredded Parmesan cheese, plus more as needed
  • Italian parsley for garnish

Instructions

  1. Prepare the Chicken: Season chicken with salt and pepper. Brown in olive oil over medium-high heat.
  2. Add Sausage: Add sliced sausage and cook until lightly browned.
  3. Cook Aromatics: Stir in minced garlic and cook for about two minutes.
  4. Add Ingredients: Pour in chicken broth, heavy cream, dried pasta, and Cajun seasoning.
  5. Simmer: Bring to a simmer over medium-high heat. Reduce to low, cover, and cook for 15-20 minutes until pasta is tender.
  6. Finish: Remove from heat and stir in Parmesan cheese. Add chopped parsley and more Cajun seasoning to taste.

Notes

  • You can adjust the spice level by adding more or less Cajun seasoning.
