Description

These Oatmeal Cookies are a classic treat that’s perfect for any occasion. They’re chewy, flavorful, and loaded with oats for a satisfyingly hearty texture.

  • 1 1/2 cups all-purpose flour (180 grams)
  • 3 cups old-fashioned rolled oats
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

  • 2 sticks unsalted butter, room temperature (1 cup)
  • 2 large eggs

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Combine Dry Ingredients: In a mixing bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  2. Cream Butter and Sugars: In a separate bowl, cream together the butter, brown sugar, and granulated sugar using a mixer on medium speed for 1-2 minutes.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand just until combined. The dough will be thick.
  5. Chill Dough: Drop dough by rounded tablespoons onto a silicone mat-lined baking sheet, spacing cookies about 3 inches apart. Refrigerate for 15 minutes. Preheat oven to 350°F.
  6. Bake: Bake for 11-12 minutes. The cookies will look slightly underbaked when you remove them from the oven, but they will continue to bake on the hot baking sheet.
  7. Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For chewier cookies, use more brown sugar. For crispier cookies, use more granulated sugar.
  • You can add other ingredients to the dough, such as chocolate chips, raisins, nuts, or dried fruit.
  • If you don’t have a silicone mat, you can line your baking sheet with parchment paper.
  • Store leftover cookies in an airtight container at room temperature for up to 3 days.
