Cheesecake Filling
- 32 ounces cream cheese, room temperature (4 blocks)
- 3/4 cup powdered sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 8 ounces cool whip
- 16 Oreo Cookies (Fireworks variety if available), roughly chopped
- 1 package red or blue pop rocks or a mixture, optional
Topping
- Additional chopped Oreo Cookies for topping

Instructions
- Crust: Crush the cookies until finely ground. Melt butter and mix with cookie crumbs and food coloring. Press mixture into a baking dish to form a crust. Freeze while making filling.
- Cheesecake Filling: Beat cream cheese until smooth. Add sugar, vanilla, chopped cookies, and whipped cream. Spread over chilled crust and refrigerate for 4 hours.
