Description

These Mustard Potato Poppers are a flavorful and addictive side dish that’s perfect for any meal. Baby gold potatoes are roasted until tender, then tossed in a tangy mustard and honey glaze with garlic and chives.

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons whole grain mustard
  • 2 tablespoons honey

  • 1/2 teaspoon crushed chili flakes
  • 3 tablespoons fresh chives, minced
  • 1/4 cup sour cream, for serving (optional)
  • Kosher salt and freshly cracked black pepper, to taste

Instructions

  1. Roast Potatoes: Add potatoes and olive oil to a large skillet or Dutch oven. Cook over medium-high heat, covered, for 15-18 minutes, or until potatoes are easily pierced with a knife. Stir every 5 minutes to ensure even cooking.
  2. Add Flavorings: Add butter, minced garlic, and chili flakes to the pan. Cook for 30 seconds, stirring constantly.
  3. Glaze and Season: Remove from heat and stir in whole grain mustard, honey, and Dijon mustard. Season with salt and pepper to taste.
  4. Garnish and Serve: Toss with fresh chives and serve immediately with a side of sour cream for dipping, if desired.
