- 1/2 teaspoon crushed chili flakes
- 3 tablespoons fresh chives, minced

Instructions
- Roast Potatoes: Add potatoes and olive oil to a large skillet or Dutch oven. Cook over medium-high heat, covered, for 15-18 minutes, or until potatoes are easily pierced with a knife. Stir every 5 minutes to ensure even cooking.
- Add Flavorings: Add butter, minced garlic, and chili flakes to the pan. Cook for 30 seconds, stirring constantly.
- Glaze and Season: Remove from heat and stir in whole grain mustard, honey, and Dijon mustard. Season with salt and pepper to taste.
- Garnish and Serve: Toss with fresh chives and serve immediately with a side of sour cream for dipping, if desired.
