- 5 pounds russet potatoes, peeled and cut into 2-inch pieces
- 1/2 cup unsalted butter, cubed
- 3 cups chicken broth
- 8 ounces cream cheese, cubed
- 1/2 teaspoon garlic powder
- Salt, to taste

Instructions
- Combine Ingredients in Slow Cooker: Add the 5 pounds russet potatoes and 3 cups chicken broth to a large slow cooker. Dot the top with ½ cup cubed unsalted butter.
- Cook Potatoes: Cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are very tender.
- Drain and Mash: Once the potatoes are done cooking, strain off the cooking liquid and reserve it. Use a hand masher or a potato ricer to mash the potatoes to your desired consistency.
- Add Cream Cheese and Seasonings: Pour half of the reserved liquid over the mashed potatoes. Add ½ teaspoon garlic powder and dot the top with the cubed 8 ounces cream cheese. Cover and set the slow cooker to the “warm” setting for 20-30 minutes, or until the cream cheese is fully softened.
- Stir and Adjust Consistency: Stir the softened cream cheese into the potatoes, adding additional reserved liquid as needed until the potatoes reach your desired consistency. Season with salt and pepper to taste.
- Keep Warm and Serve: Keep warm for up to 1 hour on the “warm” setting before serving.
