This MexiMelt recipe is a quick and easy way to enjoy a cheesy and flavorful handheld meal. Soft tortillas are filled with seasoned ground beef, a blend of three cheeses, and fresh pico de gallo, then heated to create a warm and satisfying dish.

- 1 packet taco seasoning mix
- 6 soft taco-sized flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded Monterey Jack cheese
- 1 1/2 cups shredded mozzarella cheese
- 1 1/2 cups pico de gallo
Instructions
- Prepare Beef: Brown ground beef in a skillet over medium heat, breaking it into small pieces as it cooks. Drain off any excess grease. Add taco seasoning and water according to package directions, and cook until the liquid is absorbed.
- Warm Tortillas: Dampen a paper towel and wrap the tortillas in it. Microwave for 30 seconds to soften.
- Assemble: Place 4 tablespoons of the seasoned ground beef in the center of each tortilla. Top with 2 tablespoons each of cheddar cheese, Monterey Jack cheese, and mozzarella cheese. Add 2 tablespoons of pico de gallo over the cheese.
- Heat and Roll: Microwave each assembled tortilla for 30 seconds to melt the cheese slightly. Roll up the tortillas tightly and serve immediately.
