Description

This Marry Me Chicken Pasta is a creamy and indulgent dish that’s sure to impress. Tender chicken, sun-dried tomatoes, and a rich Parmesan cream sauce are tossed with your favorite pasta for a flavorful and satisfying meal.


Ingredients

  • 8 ounces uncooked pasta (any shape)
  • 2 tablespoons butter
  • 1/2 tablespoon all-purpose flour
  • 34 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1/3 cup dry white wine or chicken broth
  • 1 cup heavy cream
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups cooked or rotisserie chicken, shredded
  • 1/3 cup freshly grated Parmesan cheese, plus more for serving
  • 1 small handful fresh basil, torn or chopped
  • Salt and pepper, to taste

Instructions

  • Cook Pasta: Cook pasta in salted boiling water according to package directions until al dente. Reserve some pasta water before draining.
  • Make Sauce: While pasta is cooking, melt butter in a skillet over medium heat. Sprinkle in flour and cook for 1 minute, stirring constantly. Add garlic, tomato paste, and white wine (or broth). Stir and cook for 1 minute.
  • Thicken Sauce: Whisk in heavy cream, then stir in sun-dried tomatoes, oregano, red pepper flakes, and shredded chicken. Cook until the sauce thickens to your liking.
  • Combine and Finish: Stir in Parmesan cheese and basil. Remove from heat and season generously with salt and pepper. Add drained pasta to the skillet and toss to coat. Add a splash of reserved pasta water if needed to thin the sauce.
  • Serve: Serve immediately with extra Parmesan cheese, if desired.

Notes

  • Cream: Avoid substituting heavy cream with half-and-half or milk, as the sauce may curdle due to the acidity of the tomatoes.
  • Make Ahead: The sauce can be made ahead of time and reheated. Cook the pasta just before serving.
  • Storage: Store leftovers in the refrigerator for up to 3 days. Reheat gently on the stovetop.
