Instructions

  1. Combine the wet and dry: In a mixer, cream the butter and ⅓ cup of the icing sugar until fluffy. Add the lime zest, lime juice, and vanilla extract, then beat until the mixture is light and fluffy. In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add the flour mixture to the butter mixture and beat on low speed until just combined.
  2. Shape and chill the dough: Roll the dough into two logs, each about 2 inches in diameter. Wrap the logs tightly in plastic wrap and chill them in the refrigerator for at least one hour to firm up the dough for easier slicing.
  3. Preheat the oven and slice dough: Heat the oven to 350°F (175°C). Remove the chilled dough logs from the refrigerator and slice them into thin rounds, about 1/8 inch thick. Place the slices on baking sheets lined with parchment paper, spacing them about 1 inch apart to allow for slight spreading.
  4. Bake the cookies: Bake the cookies in the preheated oven for approximately 15 minutes, or until the edges are lightly golden. Remove from the oven and transfer the cookies to a wire rack to cool slightly but remain warm.
  5. Coat the cookies with sugar: Place the remaining ⅔ cup of powdered sugar into a resealable plastic bag.
