- 3 tablespoons olive oil
- 3/4 cup dry white wine or chicken stock
- 1 tablespoon all-purpose flour
- 1/4 cup Dijon mustard
- 3 tablespoons unsalted butter
- 3 tablespoons lemon juice
- 1 lemon, sliced (optional, for garnish)
- 2 teaspoons roughly chopped fresh parsley
- Cooked pasta or rice, for serving

Instructions
- Sear Chicken: Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear on one side for about 5 minutes without moving. Flip and cook for another 4-5 minutes, or until golden brown and cooked through. Remove chicken from the pan and set aside.
- Make Sauce: In the same skillet, whisk together flour, Dijon mustard, butter, and lemon juice. Cook over medium heat, whisking constantly, until the mixture starts to thicken. Deglaze the pan with white wine or chicken stock, scraping up any browned bits.
- Simmer and Serve: Return the chicken to the pan, along with any accumulated juices. Add lemon slices (if using) and simmer for 3-4 minutes, or until the chicken is cooked through, the sauce has thickened, and the lemon slices are softened. Season with salt and pepper to taste. Serve the chicken over cooked pasta or rice, garnished with fresh parsley.
