 - 1 pound ground beef
 - 1 large onion, diced
 - 4 cloves garlic, minced
 - 1 (15-ounce) can diced tomatoes, undrained
 - 1 (15-ounce) can tomato sauce (or tomato puree)
 - 3 ounces tomato paste (1/4 cup)
 - 4 cups chicken broth
 - 1–2 cups water (or more, as needed)
 - 1 tablespoon Italian seasoning
 - 1 teaspoon sea salt (or more, to taste)
 - Black pepper, to taste
 - 8 ounces bowtie pasta (uncooked)

- 1/2 cup ricotta cheese
 - 2 ounces shredded mozzarella cheese (about 1/2 cup)
 - 1/4 cup Parmesan cheese, shaved, shredded, or grated
 - 1/4 cup fresh parsley, chopped
 
Instructions
- Brown Meat and Sauté Vegetables: Heat olive oil in a large soup pot over medium-high heat. Add ground beef, onion, and garlic. Sauté until beef is browned and vegetables are softened. Drain excess fat, if needed.
 - Simmer Soup: Stir in diced tomatoes (with juice), tomato sauce, tomato paste, chicken broth, water, Italian seasoning, salt, and pepper. Increase heat and bring to a boil.
 - Add Pasta: Add bowtie pasta and reduce heat to a simmer. Cook for 10-15 minutes, or until pasta is cooked to your liking. Stir frequently to prevent sticking. Adjust consistency with additional water or broth as needed.
 - Serve: Add ricotta, mozzarella, and Parmesan cheese to the whole pot or serve on the side for individual portions. Garnish with fresh parsley.
 
Notes
- Pasta: Use sturdy pasta like bowtie, macaroni, rigatoni, or penne. Avoid lasagna noodles, as they tend to break down easily.
 - Meat: Substitute ground beef with ground turkey or Italian sausage.
 - Tomato Variations: Use crushed tomatoes for a thicker broth or substitute canned tomato products with 24 ounces of marinara sauce and 1 cup of water.
 - Reheating: Add extra water or broth when reheating, as the pasta will absorb liquid.
