Instructions
- Prepare Kofta Mixture: In a large bowl, combine ground meat, onion, garlic, parsley, mint, sumac, pepper, salt, allspice, cumin, paprika, and cinnamon. Mix well.
- Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to overnight.
- Shape Kebabs: With damp hands, form ½ cup of the kofta mixture into a cylinder shape around a skewer. Repeat with remaining mixture.
Grilling Instructions:
- Preheat Grill: Oil the grill grates and heat to medium-high.
- Grill Kebabs: Grill kofta kebabs for about 5 minutes, turning occasionally, until browned on all sides.
Air Fryer Instructions:
- Preheat Air Fryer: Preheat air fryer to 380°F (195°C).
- Air Fry Kebabs: Place a few kebabs in the air fryer basket, ensuring they are not overcrowded. Air fry for 7-8 minutes, shaking the basket halfway through.
Serve:
- Serve hot kofta kebabs on warm pita bread with tzatziki sauce, hummus, Greek salad, and crumbled feta cheese.
