Description

This Kofta recipe is a flavorful and easy way to enjoy a classic Middle Eastern and Mediterranean dish. Ground beef or lamb is seasoned with aromatic spices and fresh herbs, then grilled or air-fried to perfection.

Ingredients

Units Scale

For the Kofta:

  • 2 pounds ground beef or ground lamb
  • 1 small onion, finely chopped or shredded
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon sumac
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cinnamon

For Serving:

  • Tzatziki sauce
  • Hummus
  • Greek salad
  • Crumbled feta cheese
  • Warm pita bread

Instructions

  1. Prepare Kofta Mixture: In a large bowl, combine ground meat, onion, garlic, parsley, mint, sumac, pepper, salt, allspice, cumin, paprika, and cinnamon. Mix well.
  2. Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to overnight.
  3. Shape Kebabs: With damp hands, form ½ cup of the kofta mixture into a cylinder shape around a skewer. Repeat with remaining mixture.

Grilling Instructions:

  1. Preheat Grill: Oil the grill grates and heat to medium-high.
  2. Grill Kebabs: Grill kofta kebabs for about 5 minutes, turning occasionally, until browned on all sides.

Air Fryer Instructions:

  1. Preheat Air Fryer: Preheat air fryer to 380°F (195°C).
  2. Air Fry Kebabs: Place a few kebabs in the air fryer basket, ensuring they are not overcrowded. Air fry for 7-8 minutes, shaking the basket halfway through.

Serve:

  • Serve hot kofta kebabs on warm pita bread with tzatziki sauce, hummus, Greek salad, and crumbled feta cheese.

Notes

  • Spices: Use all the spices in the recipe for the best flavor.
  • Herbs: Fresh herbs are preferred for optimal flavor.
  • Chilling: Chilling the meat mixture helps it firm up and allows the flavors to meld.
  • Cooking: Flip the kebabs frequently while grilling or air frying for even browning.
  • Storage: Store leftovers in the refrigerator for 3-5 days or freeze for up to 3 months. Reheat in the microwave or oven.
