Description

This classic Chicken Salad with Grapes recipe is a simple and delicious way to enjoy a light and refreshing meal. Tender chicken, crisp celery and apples, sweet grapes, and chewy cranberries come together in a creamy mayonnaise dressing.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 1/4 cups mayonnaise
  • 2/3 cup celery, diced small
  • 1 medium Gala apple, peeled and diced small
  • 3/4 cup small red grapes, halved
  • 1/3 cup dried cranberries
  • Kosher salt and freshly cracked black pepper, to taste
  • Ritz crackers and white bread, for serving

Instructions

  1. Hydrate Cranberries: Place dried cranberries in a bowl and cover with hot water. Let soak for 15-20 minutes to soften. Drain and squeeze out excess moisture.
  2. Combine Ingredients: In a large bowl, combine shredded chicken, mayonnaise, celery, apple, grapes, and rehydrated cranberries. Season with salt and pepper to taste. Mix well.
  3. Chill and Serve: Refrigerate for at least 20 minutes to allow flavors to meld. Serve chilled as a sandwich filling on white bread or with Ritz crackers.

Notes

  • Chicken: Use leftover cooked chicken or rotisserie chicken for convenience.
  • Mayonnaise: For a lighter version, use light mayonnaise or a mixture of mayonnaise and Greek yogurt.
