  • 1 teaspoon cinnamon

  • 2 cups sweetened, shredded coconut
  • 1 (12 oz) can evaporated milk
  • 1/4 cup whole milk

For Dusting:

  • 1 tablespoon powder sugar

Instructions

  1. Preheat Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Mix Wet Ingredients: In a large bowl, cream together butter and sugars until light and fluffy. Add eggs and vanilla, mix until well combined.
  3. Combine Dry Ingredients: In a separate bowl, sift together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture until just combined.
  5. Add Milk and Coconut: Slowly pour in the evaporated milk and whole milk, then fold in the shredded coconut.
  6. Bake: Transfer the batter to the baking dish and bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, cover with foil for the last 10-15 minutes of baking.
