Ingredients

Beef Chuck Roast:

  • 3 pounds boneless beef chuck roast, cut into 10 chunks

Seasonings:

  • 3 tablespoons steak seasoning
  • 1 teaspoon kosher salt

Onion Mixture:

  • 4 cloves garlic, minced
  • 2 large white or yellow onions, sliced

Broth and Thickening Agent:

  • 1 1/2 cups reduced-sodium beef broth, divided
  • 1 tablespoon Better Than Beef Bouillon
  • 2 tablespoons cornstarch

Additional:

  • 1 bay leaf

Instructions

  1. Prepare the Meat: Place the chuck roast pieces in the Instant Pot inner pot.
  2. Season the Meat: Sprinkle the steak seasoning and salt over the meat.
  3. Add Ingredients: Pour in 1 and 1/4 cups of the beef broth. Add garlic on top of the meat, followed by sliced onions.
  4. Seasonings: Add Better Than Beef Bouillon and the bay leaf.
  5. Cook: Close and lock the lid, set pressure release valve to sealing. Pressure cook on manual high pressure for 60 minutes.
  6. Natural Release: Allow pressure to naturally release for 25 minutes.
  7. Shred the Meat: Remove and shred the meat. Discard bay leaf.
  8. Thicken the Gravy: Mix 1/4 cup beef broth with cornstarch. Switch to sauté mode, stir in cornstarch mixture, and cook until thickened.
  9. Serve: Serve the gravy over the shredded meat.
