This Honey Sesame Chicken Noodle Bake is a delicious and convenient one-dish meal that’s perfect for busy weeknights. Uncooked spaghetti noodles are baked with tender chicken, a colorful vegetable medley, and a sweet and savory honey sesame sauce. It’s a flavorful and fuss-free dinner that the whole family will love.

Ingredients

Units Scale
  • 1 pound chicken breasts, cut into 1-inch pieces
  • 8 ounces spaghetti noodles, uncooked
  • 1 (10.8-ounce) frozen vegetable medley (Asian medley recommended)
  • 2 cups chicken broth
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon cornstarch
  • Sesame seeds and chopped green onion, for garnish

Instructions

  1. Preheat Oven and Prepare Dish: Preheat oven to 400°F (200°C). Spray a 13 x 9 x 2-inch rectangular baking dish with nonstick cooking spray.
  2. Layer Noodles and Vegetables: Place the uncooked 8 ounces spaghetti noodles in the bottom of the prepared baking dish. Top with the 1 (10.8-ounce) frozen vegetable medley.
  3. Add Chicken: Place the 1 pound chicken breast pieces on top of the noodles and vegetables.
  4. Prepare Sauce: In a medium-sized bowl, whisk together the 2 cups chicken broth, ¼ cup soy sauce, ¼ cup honey, 1 tablespoon brown sugar, 2 tablespoons rice vinegar, 1 tablespoon sesame oil, ½ teaspoon ground ginger, 1 teaspoon minced garlic, and 1 tablespoon cornstarch.
  5. Pour Sauce Over Dish: Pour the sauce over the pasta, vegetables, and chicken.
  6. Cover and Bake: Cover the baking dish with aluminum foil and bake for 30 minutes.
  7. Stir and Bake Uncovered: After 30 minutes, remove the foil and gently stir to loosen the noodles from the bottom of the pan. Bake uncovered for 20 minutes, or until the chicken is fully cooked and the noodles are tender.
  8. Garnish and Serve: Garnish with sesame seeds and chopped green onion before serving.

Notes

  • You can use other types of pasta, such as linguine or fettuccine.
  • Adjust the sweetness and saltiness of the sauce to your preference.
  • Add other vegetables like bell peppers, broccoli, or snow peas.
  • For a spicier dish, add red pepper flakes or sriracha.
  • Ensure the chicken is cooked through (internal temperature of 165°F/74°C).
  • If the sauce is too thin after baking, you can thicken it by simmering it on the stovetop for a few minutes.
