Carrots:

  • 2 pounds medium carrots (about 8)

Honey Glaze:

  • 3 cloves garlic
  • 3 tablespoons unsalted butter
  • 1 1/2 tablespoons honey
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 small lemon
  • Chopped fresh parsley leaves, for garnish (optional)

Instructions

  1. Preheat Oven: Arrange a rack in the middle of the oven and heat to 425°F.
  2. Prepare Carrots: Peel and trim carrots. Cut into pieces and place on a baking sheet.
  3. Make Honey Glaze: Melt butter, add garlic, honey, and whisk to combine.
  4. Coat Carrots: Drizzle half the honey glaze over carrots, season with salt and pepper, toss to coat.
  5. Roast: Roast for 15 minutes, then toss and roast for an additional 15-20 minutes until tender.
  6. Finish: Drizzle remaining honey glaze, squeeze lemon juice over carrots, and toss. Garnish with parsley.
