Ingredients
Scale
For the Yogurt Mixture:
- 1/2 cup Greek yogurt (full fat)
- 1/4 cup powdered peanut butter (such as PB Fit or PB2)
- 1 tablespoon creamy peanut butter
- 1/2 tablespoon maple syrup
For the Chocolate Coating:
- 1/2 cup dark chocolate chips (such as Lily’s)
- 1 teaspoon coconut oil
- Flaky sea salt for topping (optional)
Instructions
- Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, powdered peanut butter, creamy peanut butter, and maple syrup. Stir thoroughly until the mixture is smooth and evenly combined.
- Form and Freeze the Bites: Line a plate or small baking tray with parchment paper. Using a medium cookie scoop or spoon, portion the yogurt mixture into evenly sized bites (about 6). Place the bites in the freezer for 10-20 minutes or until firm to the touch.
- Melt the Chocolate for Coating: While the yogurt bites freeze, melt the dark chocolate chips with coconut oil using a microwave or double boiler, stirring frequently until smooth and liquid.
- Dip and Set the Chocolate-Coated Bites: Once the yogurt bites have firmed, dip each one thoroughly into the melted chocolate to coat. Optionally sprinkle with flaky sea salt before the chocolate hardens. Place coated bites in the refrigerator to allow the chocolate to fully set.
- Serve and Store: After the chocolate coating has solidified, the yogurt bites are ready to enjoy. Store any leftovers in the fridge for up to 3-4 days to maintain freshness.
Notes
- Using full-fat Greek yogurt provides creamier texture and better flavor.
- Powdered peanut butter lowers fat content while maintaining peanut flavor.
- Flaky sea salt topping is optional but enhances the chocolate-peanut flavor balance.
- Ensure the bites are frozen well before dipping to prevent melting during chocolate coating.
- Store bites in an airtight container in the fridge after coating to prolong shelf life.
