Description

This Ground Beef Lo Mein is a quick and easy weeknight meal that’s packed with flavor. Tender ground beef, colorful vegetables, and perfectly cooked noodles are tossed in a savory sauce for a satisfying and convenient dish.


Ingredients

  • 8 ounces lo mein noodles (or spaghetti, linguine, or ramen noodles)
  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1/2 medium onion, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 5 ounces cremini mushrooms, sliced
  • 1 cup snow peas or sugar snap peas
  • Salt and pepper, to taste
  • Chopped scallions, for garnish (optional)

For the Sauce:

  • 3/4 cup beef broth (or water)
  • 1/4 cup hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon apple cider vinegar or rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic, minced

Instructions

  • Prep Ingredients and Make Sauce: Prepare all ingredients as listed. In a bowl, whisk together all sauce ingredients until smooth.
  • Cook Noodles: Cook noodles according to package directions until al dente. Drain and set aside.
  • Brown Beef: In a large skillet, brown ground beef over medium-high heat. Drain excess fat, if necessary. Remove beef and set aside.
  • Sauté Vegetables: Add olive oil to the skillet and sauté onions until softened. Add bell peppers, mushrooms, and snow peas (or sugar snap peas). Cook until tender-crisp.
  • Combine and Finish: Return cooked beef to the skillet. Pour in the prepared sauce and bring to a simmer. Cook until sauce thickens slightly.
  • Toss with Noodles: Remove from heat and add cooked noodles to the skillet. Toss to coat evenly with the sauce. Season with salt and pepper to taste.
  • Serve: Garnish with chopped scallions, if desired, and serve immediately.

Notes

  • Noodles: Substitute lo mein noodles with other long pasta varieties or ramen noodles.
  • Hoisin Sauce: Find hoisin sauce in the Asian foods section of most grocery stores.
  • Spice Level: Adjust the amount of sriracha to your preference.
