Orzo Pasta:
- 4 cups prepared orzo pasta
Chicken:
- 2 tablespoons extra virgin olive oil
- 4 pieces boneless skinless chicken breasts
- 2 tablespoons dried oregano
- 1 tablespoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon pepper
Veggie Mixture:
- 1 medium cucumber, sliced and quartered
- 2 large shallots, diced
- 12 cherry tomatoes, halved or diced
- 2 tablespoons lemon juice
Additional:
- 1 cup Tzatziki sauce
- 1/2 cup feta cheese, crumbled
- 1 bunch Fresh mint for garnish (optional)
Instructions
- Prepare Orzo: Cook orzo according to package directions. Set aside.
- Cook Chicken: Season chicken with half of the oregano, basil, salt, and pepper. Cook in a skillet until golden brown and cooked through. Slice thinly.
- Prepare Veggie Mixture: Combine cucumbers, shallots, tomatoes, and lemon juice in a bowl. Season with salt and pepper.
- Assemble Bowls: Divide orzo among bowls. Top with sliced chicken, veggie mixture, dollops of Tzatziki sauce, feta cheese, and mint.
