Sweet Potato Wedges:
- 2 large sweet potatoes
Coating:
- 3 large eggs, beaten
- 1 cup grated Parmesan
- 1 teaspoon salt
- 1 teaspoon coarse ground pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat oven: Preheat oven to 450°F.
- Prepare sweet potatoes: Wash and quarter sweet potatoes.
- Beat eggs: Beat eggs in a medium bowl and set aside.
- Mix coating: In another bowl, mix Parmesan, salt, pepper, garlic powder, parsley, oregano, paprika, and cayenne.
- Coat potatoes: Dip potato wedges in eggs, then in Parmesan mixture. Place on a baking sheet.
- Bake: Bake for 20 minutes until golden brown.
