Sweet Potato Wedges:

  • 2 large sweet potatoes

Coating:

  • 3 large eggs, beaten
  • 1 cup grated Parmesan
  • 1 teaspoon salt
  • 1 teaspoon coarse ground pepper

  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat oven: Preheat oven to 450°F.
  2. Prepare sweet potatoes: Wash and quarter sweet potatoes.
  3. Beat eggs: Beat eggs in a medium bowl and set aside.
  4. Mix coating: In another bowl, mix Parmesan, salt, pepper, garlic powder, parsley, oregano, paprika, and cayenne.
  5. Coat potatoes: Dip potato wedges in eggs, then in Parmesan mixture. Place on a baking sheet.
