  • 1 teaspoon mustard powder
  • 1 teaspoon honey
  • 1/2 chicken bouillon cube

  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley

  • 2 large boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 2 teaspoons chopped fresh parsley (plus extra for garnish)
  • 12 tablespoons olive oil
  • 3/4 cup dry white wine
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the sauce: Combine chicken broth, heavy cream, Worcestershire sauce, mustard powder, honey, chicken bouillon cube, onion powder, oregano, basil, and parsley in a measuring cup with a spout. Stir to combine and set aside.
  2. Prepare the chicken: Slice each chicken breast in half lengthwise to create thinner cutlets. Cover with plastic wrap and gently pound to ½ inch thickness using a meat mallet or rolling pin. Season both sides with salt, pepper, and chopped parsley.
  3. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken in batches for 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  4. Deglaze the pan: Turn off heat. Pour in white wine to deglaze, then turn heat to medium. Use a spatula to scrape up browned bits (fond) from the pan. Bring to a gentle bubble and reduce wine for 2 minutes.
  5. Cook garlic and sauce: Add minced garlic to the skillet and cook for 2-3 minutes until fragrant. Stir in butter and flour, cooking for 1-2 minutes to eliminate raw flour taste. Gradually add the prepared sauce mixture in small splashes, stirring continuously. Bring to a boil, then reduce heat and simmer for about 8 minutes to thicken.
  6. Add cheese and lemon: Reduce heat to low. Gradually stir in Parmesan cheese until melted and incorporated. Stir in lemon juice.
  7. Finish cooking: Return chicken to skillet, spoon sauce over the top, and simmer for 5 minutes until heated through and sauce has thickened to your liking. Garnish with additional chopped parsley and serve.

  • You can substitute chicken breasts with chicken thighs for a juicier result.
  • For a thicker sauce, simmer a few additional minutes until desired consistency is reached.
  • Pair with mashed potatoes, rice, or roasted vegetables for a complete meal.
  • Use fresh herbs when possible for the best flavor; dried herbs can be used but at half the amount.
  • If you prefer a less creamy sauce, reduce the heavy cream by half.
