- 3/4 cup oats
- 1/2 tsp cinnamon
- 1/4 cup almond butter
- 3–4 tbsp honey (adjust to desired sweetness)
- 1 tsp vanilla extract
Filling & Topping
- 1 1/2 cups Greek yogurt
- Berries of choice to top
Instructions
- Prepare the granola dough: In a bowl, mix the oats, cinnamon, almond butter, honey, and vanilla extract until combined into a sticky dough. If the mixture feels too dry, add a bit more almond butter and honey until it holds together well.
- Form the granola base: Line a muffin pan with muffin liners. Spoon a portion of the granola dough into the bottom of each muffin cup and press firmly with your fingers to create a sturdy base layer.
- Add yogurt and toppings: Spoon a generous amount of Greek yogurt into each granola base cup, then top with fresh berries and any leftover granola dough for added texture.
- Freeze to set: Place the muffin pan in the freezer for at least 4 hours or until the cups are fully set and firm.
- Serve: Remove the frozen yogurt granola cups from the freezer, let them thaw slightly for a couple of minutes to soften, and enjoy as a tasty, cool treat.
Notes
- Using full-fat Greek yogurt will yield creamier texture, but low-fat works as well.
- You can substitute honey with maple syrup or agave syrup for a vegan variation.
- Feel free to customize toppings with nuts, seeds, or your favorite fruit.
