Description

A perfect no-bake summer dessert! These frozen s’mores are a delightful fusion of creamy chocolate pudding, fluffy marshmallow filling, and crispy graham crackers. A quick, cool, and crowd-pleasing treat for any occasion.

Pudding Layer:

  • 1 (5.9-ounce) box instant chocolate pudding
  • 2 1/2 cups whole milk
  • 1/2 cup Cool Whip, defrosted

Marshmallow Cream Layer:

  • 5 ounces cream cheese, at room temperature
  • 6 ounces marshmallow creme (a little less than 1 jar)
  • 2 cups Cool Whip, defrosted
  • Pinch of salt

Assembly:

  • 12 graham crackers, broken in half and divided

Instructions

  1. Prepare the Baking Dish
    Line a 9×13-inch baking dish with parchment paper, leaving some extra parchment hanging over the edges to easily lift the finished s’mores out later.
  2. Make the Chocolate Pudding Layer
    In a medium bowl, whisk together the instant chocolate pudding mix, milk, and ½ cup of Cool Whip until the mixture is smooth and creamy.
  3. Assemble the Bottom Layer
    Evenly arrange half of the graham cracker halves in a single layer on the bottom of the prepared baking dish. Spread the pudding mixture over the graham crackers, creating an even layer. Chill in the refrigerator while preparing the next layer.
  4. Prepare the Marshmallow Cream Layer
    In a medium bowl, use a hand mixer to beat the cream cheese and marshmallow creme until smooth and fluffy. Gently fold in the remaining 2 cups of Cool Whip and a pinch of salt to create a light, airy mixture.
  5. Assemble the Top Layer
    Carefully spread the marshmallow cream mixture evenly over the chilled chocolate pudding layer. Arrange the remaining graham cracker halves on top to form a sandwich layer. Cover the dish with foil.
  6. Freeze and Set
    Freeze the dessert for at least 6 hours, or until firm enough to cut through cleanly.
  7. Slice and Serve
    Use the overhanging parchment paper to lift the frozen s’mores out of the baking dish. Place on a cutting board and use the graham crackers as a guide to slice the dessert into 12 squares. Trim any uneven edges for a neat presentation.
  8. Store and Serve
    Serve the s’mores softened or store in the freezer in a zip-top bag. If frozen, allow them to soften at room temperature for about 15 minutes before enjoying.
