Description

This Feta Chicken Salad is a light, refreshing, and flavorful twist on a classic comfort food. Packed with tender shredded chicken, crisp vegetables, creamy feta, and a blend of aromatic herbs, it’s perfect for a quick lunch, a light dinner, or a picnic side. Enjoy it on its own, in a sandwich, or over a bed of greens for a healthy and satisfying meal.


Ingredients

  • 3 cups cooked chicken, shredded
  • 1/2 small red onion, diced
  • 1/2 red bell pepper, diced
  • 3 celery stalks, diced
  • 1/2 cup mayonnaise
  • 1/2 cup feta cheese crumbles
  • 2 teaspoons dried dill
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Salt, to taste

Instructions

  1. Combine Chicken and Vegetables:
    1. In a large bowl, add the shredded cooked chicken, diced red onion, diced red bell pepper, and diced celery.
    2. Toss to combine.
  2. Mix Dressing:
    1. In a small bowl, mix together the mayonnaise, feta cheese crumbles, dried dill, dried oregano, garlic powder, black pepper, and salt.
    2. Mix until smooth.
  3. Combine Salad and Dressing:
    1. Spoon the mayonnaise mixture onto the chicken and vegetable mixture.
    2. Mix until evenly coated.
  4. Chill:
    1. Cover the bowl and chill in the refrigerator for at least 1 hour to allow the flavors to meld.

Notes

  • Use leftover rotisserie chicken or poached chicken for convenience.
  • Adjust the amount of mayonnaise to your preference.
  • For a lighter version, use Greek yogurt instead of mayonnaise.
