- 2 1/2 cups whole milk
- 1 cup mozzarella cheese
- 1 cup sharp cheddar cheese
- Paprika, for garnish
- Kosher salt and freshly cracked black pepper, to taste
Instructions
- Parboil Cabbage:
- Bring a pot of salted water to a boil.
- Add the cabbage wedges and parboil for 1 to 3 minutes.
- Drain the water and slice the cores off the cabbage wedges.
- Prepare Baking Dish:
- Preheat oven to 350°F (175°C).
- Grease a 9×9 inch baking dish with baking spray.
- Set the par-cooked cabbage wedges into the prepared dish.
- Make Cheese Sauce:
- In a nonstick skillet, melt the butter.
- Whisk in the flour, creating a roux, whisking continuously for 1 to 2 minutes.
- Gradually whisk in the milk in batches, stirring until the sauce becomes thickened.
- Turn off the heat and add the mozzarella and cheddar cheeses, stirring until melted and smooth.
- Assemble Casserole:
- Pour the cheese sauce over the prepared cabbage wedges.
- Sprinkle with paprika.
- Bake:
